Yummy Breakfast Casserole

I love this breakfast casserole for breakfast or dinner, it is so yummy. And for us it is a pretty cheap meal that feeds the whole family with leftovers. You can serve it with biscuits and fruit for a very comforting meal anyone would love. The best thing about it is you can make it ahead, and put it in the fridge to cook later. In other words, you can put it all together the night before and cook it in the morning. So, here you guys go!

* 9 eggs
* 1 1/4 cup of milk
* 1 lb. of sausage (I like to used spicy sausage, it adds flavor b/c its spread out over the casserole)
* 8 Frozen hash brown patties
* 8 oz. of shredded cheddar cheese (I like sharp)

Line a 9 x 13 pan with the hash brown patties. Brown sausage like you would hamburger meat, drain, and sprinkle it over the patties. In a seperate bowl, mix the eggs and milk well and pour mixture over patties and sausage. Take the shredded cheese and sprinkle on the top of casserole. Cover with aluminum foil and cook on 350 for 45 minutes. Remove cover and continue to cook for another 10-15 minutes or until chesse begins to brown around the edges.

I'm cooking my sausage as I type this. :) I thought about this meal all the way home from the midwife's place. mmmmmmmm!

Ok, but I did forget to pick up the hashbrowns so I'll be missing out on that, but still, eggs, cheese, and sausage will sure make a good meal.

Thanks again for posting it!!!
